Luigi Stivaletta is a pastry chef with over 25 years local and international industry experience. He has baked and created sweet treats – from patisserie in France and Italy, to breads in Beijing and cakes, chocolates and pastries for his own businesses here in Sydney. Current owner of Dolci da Luigi, he divides his time between teaching and creating wedding cakes, fine chocolates, Italian and French pastries.
With his comprehensive knowledge of all things patisserie, Luigi loves to share his skills and passion with others through teaching – which he has delivered at TAFE and other industry training colleges, as well as adult education leisure courses.
Luigi’s energy and infectious enthusiasm for his subject make his classes a lively and fun experience for all.
